Friday Recipe: Slow Cooker Barbecue Chicken

I just love good slow cooker recipes, especially on the weekend.  I used to think of slow cookers as winter appliances, but they are great to use in the summer also.  A slow cooker does not really heat up the kitchen like an oven and who doesn't love a great barbecue sandwich in the summer :-)

One of my family's favorite recipes is Zesty Slow Cooker Chicken Barbecue found on allrecipes.com (one of my favorite places to find great recipes!).

Ingredients:

6 frozen boneless, skinless chicken breast halves
1 (12 ounce) barbecue sauce
1/2 cup Zesty Italian Salad Dressing
1/4 cup brown sugar
2 tablespoons Worcestershire sauce

Directions

1.  Place chicken in a slow cooker.  In a bow, mix the barbecue sauce, Italian salad dressing,
brown sugar, and Worcestershire sauce .  Pour over the chicken.
2.  Cover and cook 3 to 4 hours on High or 6 to 8 hours on Low.

I take the chicken out and shred with a fork, then spoon some of the sauce over the shredded chicken.

That is it!

Serving options:

1.  Serve over sandwich rolls with chips and fruit.

2.  Serve with fresh green beans, corn on the cob, and big fluffy biscuits.

YUM!

Blessings!

Military Welcome Home Banner

I always get teary-eyed watching our military return from duty on the news.  Yesterday was one of those days and then I had an idea... a military welcome home banner.  So I sat down last night and created a banner with yellow ribbons, stars, and stripes.  I have listed it on my Etsy storefront for $1.00.  Each section is 7 1/2 inches from top to tip and 5 1/2 inch wide.  There are two options for hanging the banner- It could be one long banner with yellow ribbons as each end or in two sections with yellow ribbons at the end of each sections.  It is just one simple way to say thank you to our troops and their families for the sacrifices they make for our freedom.

Friday Recipe: Flower Cupcake in a Cone

Family Fun magazine has so many wonderful recipes for families and kids.  Their Flower Cupcake in a Cone is a great one for a party and would be perfect with my Butterfly Garden Collection!

Topped with candy flowers, these desserts draw partygoers in like, well, bees to blossoms. For a birthday celebration, you can tuck candles among the flowers.
Ingredients
  • 1 box of cake mix, any flavor
  • Flat-bottomed ice-cream cones
  • White frosting
  • Large gumdrop disks, such as Sunkist Gourmet Fruit Gems (one 14-ounce bag can decorate 5 cupcakes)
Instructions
  1. Prepare the cake batter according to the directions on the box. Fill the narrow bottom of each ice-cream cone with the batter. Set the cones on a baking sheet and transfer them to the oven, being careful not to tip them over.
  2. Bake at 350º for 25 minutes or until a toothpick inserted into the center of a cupcake comes out clean. Let them cool, then frost the tops.
  3. Flower Cupcake in a Cone Recipe - Step 3 To make each candy flower, cut 6 wedges from the edges of a gumdrop disk and cut a green gumdrop disk into slices for leaves. Press the wedges into the middle of the cut flowers for flower centers, then arrange the candies on top of the frosted cupcakes. One box of cake mix yields 34 cupcakes (or make fewer and use the remaining batter for a small cake).

Enjoy and have a wonderful weekend!

Getting Ready to Celebrate the 4th of July!

America's birthday is quickly approaching.   Want to give your party a patriotic look in a simple and frugal way?

Start with my printable 4th of July Collection which contains 2 inch circles that can be used as cupcake toppers or favor tags and cupcake wrappers that give that finishing touch.  A 6 inch circle that can be used as a sign or table decorate.  You have water bottle wrappers and napkin wrappers.  Attach a dowel to the 5 inch cake topper and maybe add a ribbon and you have a patriotic cake.  There are signs for  your party.  Rectangular labels, flat and tent style, are great to label food or to use as place cards.  Coordinating scrapbook paper to scrapbook your special memories.  And finally, a banner to string on the table, tent or house.  All this for $9.50!

And the best part..... you can print as many as you need!!  Once your payment clears PayPal, an email will be sent with everything attached.

You just need basic craft supplies to get everything ready:  white card stock, scissors, craft dowels, double-sided tape, ribbon (I would suggest an 1/2 inch ribbon to string the banner), x-acto knife, and a 2 inch round or scalloped punch for the 2 inch circles.

I went to the Dollar Tree today and picked up flag plates, red napkins, blue cups, and a red table cloth.

And volia.... you are ready for an amazing 4th of July Party for under $15.00!  SO simple, SO easy!

I also have a collection with custom invitations for $15.50 and a smaller collection containing the 2 inch circles, cupcake wrappers, and the 6 inch circle for $5.00.

You can see everything in my Etsy Storefront at http://www.kellyscottageshoppe.etsy.com

Refreshing Summer Treat

It is summer time, the kids are getting out of school, and the temperature is rising.

I was looking at the current magazine from BJs wholesale club and ran across this refreshing and healthy summer snack.  I just had to share it here :-)

Fresh Fruit Frosties   Serves 4   Prep time: 10 mins.

The basic recipe uses strawberries and cantaloupe.  Other delicious combinations are blueberries and watermelon, strawberries and kiwi, cantaloupe and honeydew, blackberry and papaya.

You will need:

2 cups of fresh fruit
1 Tbsp sugar
1 tsp fresh lemon juice

Place 1 1/2 cups fruit, sugar, and lemon juice in a blender and blend until smooth.  Add the remaining fruit, change the setting to chop and pulse.  Mixture will be mostly smooth with a few small lumps of fruit.  Pour into 4 oz paper cups or any 4 oz popsicle form.  Insert sticks.  Freeze until solid, at least 1 hour.  Then, ENJOY!!!

These would also be great to serve at a summer birthday party or 4th of July Party.

Blessings!

Time Flies

How time flies!  It seems just like yesterday that I was changing diapers and washing sippy cups.  Now my oldest is a senior in high school and my youngest will be a sophomore.  I have found this to be a bittersweet time in life.  I am so proud of the young man and young lady they have become and this time in my family's life has caused me to enter into a time of reflection.

Being a wife, mom, and school teacher have taught me so much over the last 21 years.  I would like to use this blog to share favorite recipes, hints, tips that have worked for me over the years.  I would also like to share by love of photography, making cards and coordinated party collections, and developing party ideas.

I have recently opened an online storefront at www.kellyscottageshoppe.etsy.com.  I would live for you to visit and see what I have developed so far.

Until next time...

Blessings!
